Ingredients
  

  • 1 cup old-fashioned rolled oats
  • 3/4 cup milk
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons cream cheese softened
  • 1 cup fresh strawberries diced
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • 2 graham cracker sheets crushed
  • Fresh strawberry slices for topping

Method
 

  1. Wash the strawberries, remove the stems, and dice them into small pieces. Reserve a few slices for serving.
  2. In a medium bowl or jar, whisk together the Greek yogurt, softened cream cheese, milk, maple syrup, vanilla extract, and salt until mostly smooth and creamy.
  3. Add the rolled oats and chia seeds. Stir thoroughly until the oats are evenly coated.
  4. Gently fold the diced strawberries into the oat mixture.
  5. Divide the mixture between two jars or airtight containers. Cover and refrigerate for at least 4 hours or overnight.
  6. When ready to serve, stir the overnight oats. Add a small splash of milk if you prefer a thinner consistency.
  7. Top with fresh strawberry slices and crushed graham crackers just before serving.
