Hot Honey Ground Beef Bowl

Ingredients
  

  • 2 medium sweet potatoes peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste
  • 1 cup cottage cheese
  • 1 large avocado sliced
  • 3 tablespoons hot honey plus more to taste
  • Fresh cilantro or green onions optional for serving

Method
 

  1. Preheat the oven to 425°F (220°C). Toss the diced sweet potatoes with olive oil, half of the smoked paprika, salt, and black pepper. Spread them on a baking sheet and roast for 20–25 minutes, turning halfway through, until tender and lightly browned.
  2. While the sweet potatoes roast, heat a large skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it apart with a spatula, until browned and fully cooked.
  3. Season the beef with the remaining smoked paprika, garlic powder, onion powder, ground cumin, salt, and black pepper. Stir well and cook for another 1–2 minutes.
  4. Divide the roasted sweet potatoes and seasoned ground beef between serving bowls.
  5. Add cottage cheese and sliced avocado to each bowl.
  6. Drizzle the bowls with hot honey. Start with a small amount and add more depending on how sweet and spicy you like it.
  7. Garnish with fresh cilantro or sliced green onions, if desired. Serve immediately and enjoy.

Notes

For extra heat, add more hot honey or a pinch of red pepper flakes. You can also swap the cottage cheese for Greek yogurt if preferred. Store leftovers in an airtight container in the refrigerator for up to 3 days.
