- Preheat the oven to 425°F (220°C). Toss the diced sweet potatoes with olive oil, half of the smoked paprika, salt, and black pepper. Spread them on a baking sheet and roast for 20–25 minutes, turning halfway through, until tender and lightly browned.
- While the sweet potatoes roast, heat a large skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it apart with a spatula, until browned and fully cooked.
- Season the beef with the remaining smoked paprika, garlic powder, onion powder, ground cumin, salt, and black pepper. Stir well and cook for another 1–2 minutes.
- Divide the roasted sweet potatoes and seasoned ground beef between serving bowls.
- Add cottage cheese and sliced avocado to each bowl.
- Drizzle the bowls with hot honey. Start with a small amount and add more depending on how sweet and spicy you like it.
- Garnish with fresh cilantro or sliced green onions, if desired. Serve immediately and enjoy.
Notes
For extra heat, add more hot honey or a pinch of red pepper flakes. You can also swap the cottage cheese for Greek yogurt if preferred. Store leftovers in an airtight container in the refrigerator for up to 3 days.
